I'm generally not a fan of team sports but I'll tune into watch the NBA play offs every now and then. While watching the final game last Sunday it wasn't popcorn, chips&salsa, or maybe a bucket of chicken to snack on during the game. Nooo not at our pad! To our culinary delight, the ol'lady (that's biker talk bro!) made quite the in-game snack. I had a moment to snap this quick photo during the first half of the game:
We had a big zucchini come hole-shotting itself out of our garden, so it was shredded with onions, basil, garlic, salt, pepper, and some other zest that was sprinkled into a bowl along with eggs, flour and baking powder. These items were mixed into a batter to create four Zucchini Pancakes!
One large tomato was picked from our garden stash which was made into a sauce. Can't forget to mention, three of these pancakes were stuffed with feta cheese and the last one was stuffed with blue cheese. It was served with lavash flat bread, olives and cherry tomatoes. Happy Sunday!

Yeah..use what you got! i remember about 4 years ago at our Old House
we got a GREAT garden going in the back..we had tomatoes and squash up the Ying..anyhow we gave so much away & finally we were out of squash which dissapointed my youngest at the time..we had been out for like 2 weeks and she came in the house with this 3 foot Zuke
and it was 8 in. diameter she was wobblin in all smiles..funniest thing ever..she was about as big as the Zuke! ha ha
